Eat With Me in the Greenhouse: A Vision for Gathering, Healing, and Simple Food

There’s something powerful that happens when food is grown just steps away from where it’s cooked.
You can feel it in the air. You can smell it. You can taste the difference before the first bite even reaches your mouth.

For years now, I’ve been building something quietly in the background—on our farm, in our greenhouse, and in my kitchen. And next year, I’ll be launching it fully.
It’s called Eat With Me in the Greenhouse.
But before that, I’ll be hosting one small trial event this season.
And I want to tell you why this matters to me—and what it could become for you.
My Story: How Food Became My Medicine
I didn’t start out as a chef.
I didn’t go to culinary school. I don’t have fine dining training or formal credentials.
What I do have is a story that changed everything.
At one point in my life, I was dealing with a rare autoimmune condition. My health was not where I needed it to be, and like many people, I was searching for answers outside of myself.
What I eventually discovered—through experience, research, and deep listening to my body—was that food wasn’t just fuel.
Food was information.
Food was either adding burden… or creating healing conditions in my body.
So I simplified everything.
I started eating real food. Whole food. Ingredients I could recognize. Meals I could cook without stress or complication. And slowly, things began to change.
My body began to respond.
That experience didn’t just change my health—it changed my entire relationship with food.
And it shaped the way I cook today.
The Way I Cook Now
I’m not a trained chef.
I’m a home cook who loves food deeply.
I cook with what’s in season. I cook with ingredients grown right here on our farm whenever possible. I cook simple meals that nourish my body and my family—without overthinking or overcomplicating it.

And over time, I realized something:
A lot of people want to eat this way… but feel like they don’t know how.
They feel like healthy eating is complicated.
Or expensive.
Or reserved for people with special training or perfect discipline.
It’s not.
And that’s what I want to show people.
The Vision: Eat With Me in the Greenhouse
Imagine this:
You step into the greenhouse.
The air is warm. Plants are growing all around you—tomatoes, herbs, greens, seasonal vegetables still connected to the soil they came from.
There’s a long communal table set up among the rows of food.
And I’m there—cooking.

Not behind a restaurant kitchen wall.
Right in front of you.
We cook simple, nourishing meals together using ingredients picked that day or grown steps away. Nothing complicated. Nothing performative. Just real food being prepared in real time.
Then we sit down together and eat.
No rush. No separation between farm, kitchen, and table.
Just connection.

Food the way it was meant to be experienced.
What This Event Really Is
At its core, Eat With Me in the Greenhouse is not just about cooking.
It’s about:
Learning how simple healthy meals can actually be
Rebuilding confidence in the kitchen
Understanding where your food comes from
Slowing down enough to actually taste your life
Sharing a meal in a space that feels alive
It’s intimate. It’s seasonal. It’s real.
And next year, I’ll be expanding it into a full series of events.
But first, I want to test it this season with a small group of people who feel called to be part of the beginning.
A Beta Experience This Season
I’ll be hosting one trial “Eat With Me” greenhouse event this year.
It won’t be polished or perfect.
It will be real.
A small group. A shared meal. A first version of something I believe can grow into a much bigger movement around food, healing, and simplicity
And I’m looking for people who:
Love real food
Want to learn simple, nourishing cooking
Feel drawn to food as part of their wellness journey
Enjoy being part of something new and evolving
If This Speaks to You
If something in this resonates—if you feel curious about eating this way, or being part of this kind of experience—I would love to hear from you.
You can:
Leave a comment on this post
or
Send me a message directly
And let me know if you’d be interested in being one of the beta testers for this greenhouse experience.
Next year, this will become a full series of events.
But every meaningful thing starts somewhere.
And I’d love for this to start with people who feel genuinely called to be part of it from the beginning.
Because food isn’t just something we eat.
It’s something we experience.
And we were never meant to experience it alone.

I am very interested! I believe what we eat affects everything and I would love to learn more about cooking healthy meals.
This sounds like a wonderful event and I'm sure it will be a great success. I'm very interested but it depends on timing as I will be in Ireland I'm May.
Looking forward to this 🤩
